On a busy school day, I love enjoying my protein packed quinoa  bowl. This bowl is packed with so many good veggies. I make this and meal prep for the week. I have leftovers that will hold me over for a few days, when kept fresh in the fridge. I love to use quinoa, cucumber, tomato, chickpeas, arugula, and avocado, topped with hummus and tzatki.

 

Ingredients

  • 1 serving of quoinoa
  • Fresh arugula
  • cucumber
  • Tomatoes diced 
  • chickpeas
  • avocados
  • hummus
  • Tzatki 

Step by Step Instructions

Step 1

Microwave your quioinoa bag for the amounted time listed. 

 

Step 2-

Wash and cut your veggies.

 

 Step 3

 Pour as much quinoa  into a bowl.

Step 4

Cut your tomatoes if they are not already, as well as your avocado.

Step 5

unload your veggies into the bowl and top with hummus and tzatki.

Step 6-

Add your toppings as pleased, and enjoy!
